Who else has had enough turkey? 🙋♀️ Every year I look forward to traditional Thanksgiving meals but I can never seem to cook the right amount to meet my maximum capacity for leftovers. With covid cases rising my husband and I decided to stay home this year which meant trying to find a turkey that feeds 2, a surprisingly difficult task. If you’re like me you’ve had enough.
💰Money Saving Tip: Freeze your leftover turkey and unfreeze when you feel ready to eat again a couple months later.
How to freeze your leftover turkey: Remove all meat from bones and dice or shred your turkey. Separate your turkey into ready to eat portions and place each portion in individual freezer safe containers or freezer bags. Remove as much air as possible. When ready to reuse thaw the portions you need in the fridge overnight. Lasts 6 months in freezer.
Week 1 Menu:
Freeze Meats: ground beef, ground pork, meatballs, fajita beef, chicken breast
Honey Glazed Salmon & broccoli
Super Easy Jambalaya - only 2 ingredients needed
Butternut Squash Carbonara - to make this faster buy precut/cubed butternut squash. For tomorrow: unfreeze turkey.
Nacho Soup - you can use leftover turkey in place of the chicken in this recipe. Or buy a precooked rotisserie chicken. For tomorrow unfreeze ground beef.
Beef Taco Flatbreads - buy pre-made flatbreads such as this (includes 2 flatbreads). Keep it simple: ground beef, poblano pepper, and cheese.
Easy Meatball subs. For tomorrow: unfreeze ground pork.
Week 2 Menu:
Pork Carnitas Tacos - you can simplify this recipe by excluding the pickled onions
Everything Bagel pasta - Keep it simple: buy pre-made everything bagel seasoning like this. For tomorrow unfreeze beef fajita strips.
Fajita Quesadillas - use leftover french’s fried onions. For tomorrow: unfreeze ground pork.
Baked Chicken Parmesan - keep it simple buy pre-made marinara sauce
