Hoison-Glazed Meatballs

30 minute baked meatballs with jasmine rice and snow peas

Hoison-Glazed Meatballs


Ready in 30 minutes

Serves 4 people


Ingredients

  • 1 tablespoon ginger

  • 6 ounce snow peas

  • ½ cup panko breadcrumbs

  • 1 egg

  • 4 tablespoons hoisin sauce

  • 1 pound ground beef

  • 1 cup jasmine rice

  • 2 teaspoon garlic powder

  • 1 teaspoon sugar

  • 4 teaspoon olive oil

  • 1 tablespoon butter

  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 450 degrees.

  2. Make jasmine rice. Add 1 cup of rice to a medium pot with 2 cups of water. Bring to boil. Add 1 tablespoon butter and dash of salt. Once boiling, lower heat and cook for about 18 minutes.

  3. Make meatballs. In a bowl, combine ginger, beef, panko, garlic powder, 1 tsp sugar, and 1 egg in a medium bowl. Season with salt and pepper. Form into 1-inch balls and place on oiled baking sheet. Bake in oven until no longer pink on outside, about 10 minutes.

  4. Glaze meatballs. After meatballs have cooked 10 minutes, remove baking sheet from oven. Use a spoon to glaze each meatball with hoisin sauce. Return to the oven and bake for another 5-7 minutes.

  5. Make snow peas. Heat 1 TBSP oil in a large pan over medium-high heat. Add snow peas and season with salt and pepper. Cook, tossing for about 4-5 minutes.
